Anna's Green Salad

Adding more minerals and vitamins into your diet everyday is not always easy, especially when you're busy, but Salads are always a great solution!

Anna, my lovely best friend makes this crowd favourite every time we have a big get together as it's so easy and effortless yet goes with almost anything.
Filled with antioxidants and anti-inflammatory benefits, this Salad really does give you the benefits of both worlds.

It's so simple yet filling and doesn't require exact measurements, so it's a great end of week solution for when you are trying to empty your fridge just in time for Autumnal seasonal veg.

INGREDIENTS

  • Brocoli
  • Broad Beans
  • Baby Spinach
  • Peas
  • Edamame Beans
  • Handful of fresh herbs ( Drill, Coriander, Basil, Parsley, Mint, Chervil )
  • Dressing: Seeded Dijon Mustard, White Balsamic Vinegar, Honey, Olive Oil, Salt and Pepper, Pumpkin Seeds, Sunflower Seeds.  

METHOD

1. This easy-going family friendly recipe doesn't require specific quantities, just add as much as you have and anything else green as you may have in the Fridge.

2. Add all the ingredients together in a large bowl and drizzle the dressing just before serving.

3. Enjoy with your friends and family!
