Suzanne's Tomato Soup

My amazing friend Suzanne shared with me this mouthwatering Tomato Soup, which is just perfect for this time of year and a wonderful way to take advantage of anything in your pantry.

Garnish with some pumpkin seeds for that Autumnal touch and you really have got a mouthwatering lunch that will keep you filled up and ready for anything.

Ingredients

  • 1 stick celery
  • 1 small onion
  • 1 clove garlic
  • 1 sweet potato
  • 2 cans tomatoes
  • 3 tablespoons tomato purée
  • 1 veg stock cube
  • I can butter beans (optional)
  • Water
  • Oregano & thyme
  • Pinch nutritional yeast
  • 1/2 Tosp balsamic vinegar
  • Salt & pepper



Method

  1. Sweat vegetables in olive oil until soft.
  2. Then gradually add your tomatoes, tomato purée, stock, beans, herbs & seasonings before bringing to simmer. ( Trust the process as it may seem like a lot to do all at once but this really will be the easiest thing you have ever made. )
  3. Blend when cooked in your mixer.
  4. Stir through with Greek yogurt to serve if desired to sweeten the taste.
  5. Garnish with extra yogurt and nuts if desired for that extra crunch
