Alison Roman Brown Butter Potato Salad

A new favourite that is perfect dish to make in advance for when you have guests coming for a special night or weekend.

Big Plus - you can also make this up to two days ahead and the flavours just get better and better!

Inspired by the American chef Alison Roman as I love her relaxed approach to entertaining and flavour combinations. This is the perfect twist on a German potato salad with capers.

Please take the time to cook the onion slowly to caramelise everything (8-10 minutes!!)

Serves 6-8 

INGREDIENTS

1.5 kg- small, waxy potatoes
Maldon flaked salt
1 stick of unsalted butter
60 ml of Olive oil
1 jar brined capers (you can add more if you like but I really like capers!)
1 large red onion sliced into thickish slices
Freshly ground black pepper
3 tablespoons apple cider vinegar or white wine vinegar
2 tablespoons whole grain mustard
3 large handfuls of dill coarsely chopped

METHOD

1. Boil potatoes in well-salted water until tender,

12-15 minutes; drain and let cool slightly.

2. Meanwhile, melt butter in a large frying pan. Cook, stirring occasionally until the butter starts to brown and foam, 2-3 minutes.

3. Add olive oil and capers and cook until brown and crispy, 5 mins or so.

4. Add sliced onion, and season with salt and pepper.

5. Give the frying pan a little shake and continue to cook until onions are tender, starting to brown at the edges and capers are totally crispy, 8-10 minutes.

6. Remove onions from the heat, add 3 tablespoons vinegar and toss to coat. Transfer to brown butter/onion mixture to a large bowl and add mustard and dill.

7. Once potatoes and cooled enough to handle, crush each one with the base of a jam jar to expose their insides and add them to the bowl with the brown butter, Capers, onions, mustard, and dill.


8. Toss very well to coat, season with salt and lots of black pepper. Use more black pepper than you think.

9. Adjust with more vinegar or a drizzle of olive oil if you think it needs it.

Works well with pretty much with all roasted meats and is a great addition to your catering “arsenal”! Enjoy ladies.
